Banana Swirl Fruit Tart

I wanted to create a dessert that kids could eat every day because it’s healthy.
This dessert creates the perfect balance of cold creaminess, crunchiness and natural sweetness to make any kid feel like they are getting a treat.

RINDE:  1 Tart


  • 1⁄4 cup walnuts
  • 1⁄4 cup almonds
  • 1 Tbsp pumpkin seeds 1 Tbsp. sunflower seeds 1 tsp. flaxseeds
  • 1 1⁄2 tsp honey
  • 2 tsp coconut butter 1 diced frozen banana fresh seasonal fruit
  • 1⁄2 gelatin sheet


  1. Preheat the oven to 300 degrees. Grind the nuts and seeds in a food processor until coarse. In a mixing bowl combine coconut butter and honey. Combine with the ground nuts and seeds to form a dough. Place a ring mold on a silpat lined baking sheet and shape dough into a tart shell. Bake 10 min until the nuts are toasted. Let cool.
  2. Make the banana swirl: in a blender on low speed blend the banana and gelatin until smooth. Scoop some banana swirl into the crust and arrange the fresh seasonal fruit on top.
